Sustainability and future-oriented business are high on the agenda of the Hotel Management School. It has become an integral part of the study programme and is receiving more and more attention, especially now that gas and energy prices are rising and waste costs are increasing. From now on, this will become even more visible by deploying a BioTransformer in restaurant Wannee. Kitchen and restaurant waste is no longer disposed of, but converted by the restaurant’s own digester into biogas for cooking. The by-product, vital biowater, is used for our own green spaces.
