Last Monday, 10 November 2025, we proudly joined the closing event of the programme Waddengastronomie versterkt werelderfgoedbeleving. Hosted at Restaurant Ode in Dokkum, the event showcased four talented chefs who prepared dishes using pure, locally sourced Wadden ingredients — highlighting how regional gastronomy can strengthen both heritage appreciation and visitor experience.
The Waddengastronomie programme is an initiative of Stichting Waddengroep, NHL Stenden University of Applied Sciences/ETFI and Visit Wadden, made possible by the Waddenfonds and the three Wadden provinces. The project focuses on strengthening the connection between the UNESCO World Heritage Wadden Sea and the region’s culinary identity. From NHL Stenden, Anke Arts from ETFI and Ernst Jonker from the Research Group Sustainability in Hospitality & Tourism were closely involved in the project.
After several years of collaboration, research, and innovation, the programme has resulted in new knowledge, networks, and initiatives that are shaping a vibrant culinary landscape. At the same time, opportunities remain in further growing awareness among residents and visitors and ensuring accessible, affordable regional products for broader prosperity in the area.
A warm thanks to all chefs, partners, and participants for contributing to this inspiring milestone. The Wadden’s culinary story continues, and we are proud to be part of it.
